Roasted Beets

  • 1 bunch beets (roughly 1 pound)
  • 1 tbsp olive oil
  • 4 sprigs fresh thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  1. Preheat the oven to 400 degrees F
  2. Peel and slice the beets into 1-inch pieces
  3. Toss the beets in olive oil, place them on a baking sheet with the thyme sprigs and sprinkle with salt and pepper
  4. Bake for 30-40 minutes or until beets are fork tender.
